You can work a muscle every day, but each consecutive day you work it without rest your functioning on less than 100 percent of the muscles capacity, so you can kind of limit your growth. It is always better to give a day of rest so that your muscle can fully recover before you challenge it again.
The chest muscle is such a high endurance muscle, you're probably not really killing it with push ups that's why you can do them every day, but if you start weight training it, or doing more than 100 push ups a day then you will need to start giving it more rest so that you get 100 % effort out of it the next time you train.
